Impossible Cheesecake
Serving Size: 8

3/4 cup sugar
1/2 cup Bisquick. baking mix
2 eggs
16 ounces cream cheese -- cut in 1-inch cubes
2 teaspoons vanilla
1/2 teaspoon lemon peel -- grated
1 cup sour cream
2 tablespoons sugar
2 teaspoons vanilla

Cooking Directions:

Heat oven to 350 degrees.

Grease 9" pie plate.

Place 3/4 cup sugar, baking mix, eggs, cream cheese, 2 tsp. vanilla and
lemon peel in blender container. Blend on high speed, stopping blender
occasionally to stir, until smooth about 3 minutes.

Pour into pie plate.

Bake just until puffed and center is dry, about 30 minutes. (Do not

Mix sour cream, 2 Tbsp. sugar and 2 Tsp. vanilla. Spread carefully over
top of cake, cool.

Refrigerate until chilled, at least 3 hours.

Serve with sweetened strawberries if desired.
